Chilli Basil Beef: 3 tips to dominate your next stir fry

I spent too much of my life making mediocre stir fry. Admitting it is hard. Here are my three tips to stir fry supremacy and my favourite recipe.

Grapes aren’t just for snacking, they can make a bold cameo at salad time too. These Flame Seedless were the star of my spin on an old-fashioned Waldorf. This one has bacon but a light, Greek yoghurt dressing to even the score. Recipe is up on the @ziggysfresh website now.
COOK-ALONG THIS WEEKEND! Have you bought your ingredients for the cook-along this weekend? We’re making Christmas Rocky Road! Ingredients are up in stories right now and there’s a link to the recipe in my bio. I’ll be making the recipe on stories tomorrow morning. Follow along at any point in the weekend then just tag me in your pics with #pbwecookalong Perfect way to get in the Christmas spirit for December! So excited to see all your delicious photos and if you know any bakers tell them to join in the fun x 🎄 (PS: if your account is set to private you’ll need to DM me your photos!)
Look at that little hand sprinkling ferociously. 🥰 (Slave labour doesn’t count if it’s your family, look it up!) Here’s how I used the best three trees from yesterday’s post. (never mind the rest *wink*) for a new take on the traditional Christmas cake. Thanks so much to @queenfinefoods for sending me some goodies to try out. Firstly, their meringue powder which makes pavlovas a breeze. Just add water and whip, boom! Easy, stable meringue without having to break a sweat... or an egg! 😅 🥚 And also their gingerbread icing flavour which can be added to a buttercream for a quick burst of Christmas flavour. The cake inside is a Madeira cake with currants added for those that like a fruit cake but don’t like it *too* much. #sponsored #christmas
It doesn’t have to be PERFECT! 80% and done is better than 100% and late... what do you think? I had so much fun piping these adorable meringue Christmas trees thanks to a gift pack I received from @queenfinefoods and their super easy new meringue mix. Some were wonky, others were too tall, some cracked when baking, others were majestic. The lesson? Make a whole bunch, that way you’re guaranteed to have at least three to decorate a cake! 😉 (And a whole bunch of ‘fails’ that taste equally delicious!) The mix is available in supermarkets and all you do is add water - no messy, unpredictable egg whites. Unfortunately the box doesn’t come with a professional pastry chef to pipe them for you but just keep practising x #sponsoredpost
Who would you share a peanut butter and chocolate cookie sandwich with? Tag them here to start their weekend right! These are cookies made with @reeses peanut butter choc chips using the recipe on the back, minus cocoa, and filled with chocolate ganache. Or you could use ice cream 🤤 If you’re in Canberra you can get the peanut butter choc chips at the amazing @brucesuperc 🍫#notsponsored
WHAT DO YOU DO? A lot of people ask me this and it’s not an easy answer. Am I full-time food blogger? 🤣 No. About seven years ago I quit my public service job and my then passion of consumer & competition law to be a full-time mum. I won’t bore you with details but along the way I had two kids, a failed attempt at returning to the workforce and an Oprah style ‘aha moment’. I now work part time (technically, though it feels like I never stop!) and I’ve never been happier. I’m a marketing or PR manager for a couple of businesses - @ziggysfresh would be one of the one you notice most - and I run my foodie business as well. This consists of being paid to write, photograph and edit content. Yes, I get sent free stuff to promote and I go to a few events but what you usually don’t see is the meetings, planning, shopping, photography, editing, writing and publishing that sees me up really late most nights and up early on weekends. I’m also working on a new website 🤫 I love what I do and hope that it inspires some of you to cook but also to take a leap and try some new career if that’s what your heart is telling you. Xx
